Recipe: Piccolini Perfecto!

This week I would like to share my most recent love affair with food for little ones: Barilla's Piccolini Pasta with Veggies!

Each box of pasta "contains 25 percent pureed fresh in-season vegetables." There are three different types that Barilla currently makes, shown below:

From top to bottom: Mini pipes made with carrots and squash; mini rotelle (aka wagon wheels) made with zucchini and spinach; and mini farfalle (aka bow tie pasta) made with tomatoes and carrots.

Here is a recipe I made with the mini carrot and squash pipes, which in my opinion have a bit of a sweet quality to them and were very appealing to both myself and my little one.

Mini pipe with rainbow veggies

Ingredients

  • ½ box of mini pipes
  • Corn kernels (frozen or canned)
  • Peas (frozen or canned)
  • Fresh carrots (cut into bite-sized pieces)
  • Chicken broth
  • Butter
  • Olive oil
  • Black pepper
  • Shaved parmesan cheese

Directions

  1. Follow directions on the pasta box and boil the mini pipe pasta.
  2. In a separate large sauté pan (I like to use a wok), warm the vegetables on medium heat in a cup of chicken broth (although you may need more), a tablespoon of butter and 3 tablespoons of olive oil. Let simmer until all three veggies are soft and child-ready.
  3. Add in boiled pasta and stir together. (Do not add in pasta until veggies are soft enough to eat).
  4. Sprinkle a dash of black pepper and shaved parmesan on top and mix. Let everything blend together and warm on low for about 5-10 minutes.
  5. Serve with a whole wheat roll and a cup of milk for a yummy and healthy fall meal!
