Valentine's Day Recipes with HEART!

Here is a simple Valentine's Day recipe you can make at school or with your picky eaters at home! This delicious and healthy dish will warm their tummies and their hearts!

Strawberry Heart Pancakes...from scratch!

You will need:

  • 1 ½ cups of whole wheat flour
  • 2 teaspoons of baking powder
  • ¼ teaspoon of baking soda
  • ¼ teaspoon of cinnamon
  • A pinch of salt
  • 1 small mashed banana (optional)
  • ½ cup of chopped strawberries
  • 1 egg
  • 1 cup of milk
  • Butter (2 tablespoons melted plus additional butter to grease the skillet)
  • 1 cup of fresh strawberries

Recipe Steps:

  1. Combine the flour, baking powder, baking soda, cinnamon and salt in a medium bowl. Have your little one(s) help measure, pour and mix each of the ingredients!
  1. In a separate bowl, have fun mashing the banana!
  1. Add the chopped strawberries, egg, milk and melted butter to the banana. Mix all the wet ingredients together.
  1. Add the wet ingredients to the bowl of dry ingredients and mix until blended. The batter should be thick.
  1. Heat skillet over medium-high heat and thinly coat with butter. Pour a 1/4 cup of the batter into the skillet (you will get two pancakes per batch). Cook until bubbles form on the top. Flip the pancakes with a spatula and continue cooking until golden on both sides.
  1. When the pancakes are finished and ready to serve, cut each pancake with a 3-4 inch metal heart-shaped cookie cutter, or simply cut your own heart shape using a butter knife.
  1. Decorate your heart-shaped pancakes with fresh strawberries. Get creative! Make an arrow on either side of the heart!
  1. For some added sweetness, dust the pancakes with powdered sugar. Use heart-shaped and Valentine's Day stencils to make white powdery shapes and pictures on your pancakes and plate to celebrate this scrumptious holiday. YUM!
